Baked Oregano Salmon

Ingredients

  • 4 Salmon Filets (6oz each), cooked
  • 2 teaspoons Olive Oil
  • 2 Tbsp Lemon Juice
  • 1 teaspoon Oregano
  • 1 Tbsp Butter

Beef and Barley Soup

  • 6 portions top sirloin cut into cubes
  • 4 c. reduced salt beef broth
  • Water
  • onion chopped
  • 1 stalk celery chopped
  • Carrots, sliced

Trail Mix Loaf

This is one of our absolute favorites!!! Be careful not to eat the whole thing!!! (Can also be made as muffins). This is from Company's Coming Muffins and More (I am 99% sure....)

This is the yummiest, bestest soup EVER!!! Thank you to Jennifer Hann Woodland for sharing with me so I can share with you!!! ENJOY!

Coconut Macadamia Crusted Chicken

  • ¼ c. flaked coconut

  • 2/3 c. cooked brown rice
  • ½ c. carrots grated

Energy Boosting Oatmeal

  • ½ c. (dry measure) quick cooking oats (or 1/4 c. steel cut oats) 
  • 1 ½ c. water
  • cinnamon
  • 2tbsp dried cranberries or raisins
  • ¼ c. chopped nuts
  • 1tbsp flaxseed

Boil water to cook oats, simmer until water is absored, add fruit, nuts etc and serve with 1c. milk.

  • Whole wheat wrap
  • Egg + white
  • ¼ pepper
  • ¼ onion
  • 1/2c. salsa
  • ¼ c. mozza.


Bake wrap at 350 for ten mins, turning half way. Scramble eggs and pepper and onion. Spread salsa on wrap, top with egg/veggies and sprinkle with cheese.
